Holey Bread, artisanal Bakery born out of a passion

Lilian Guerra and Nasirul Alam Porag moved from New York to Dhaka, Bangladesh in 2005 to start a new natural pharmaceutical business. Lilian, born in Brazil, couldn’t find the authentic bread in south Asia. So her husband Porag used his natural cooking skills to rise up to the challenge. In his quest to make “the best bread in the world” as he calls it, he began to consult with bread experts around the world via email. His research eventually led him to meet Maurice Chaplais, a British artisanal bread consultant renowned internationally.

Partnering with Sadat, a close friend and enthusiastic restaurateur, everything was set to open their first Holey Artisan Bakery in late 2014. Fitted with Bongard equipment, this bakery is located in a villa overlooking Gulshan Lake, one of Dhaka’s most sought-after residential areas, an enclave that houses many foreign embassies. This bakery quickly met its customers and became a great success!







Unfortunately, soon after this achievement, tragedy struck.
Porag received a heartbreaking call on the evening of 1 July 2016: his bakery had been the target of an armed terrorist group that left many victims on their path.

Such a terrible event would have put an end to any business. It takes strength to face such a tragedy and keep going. Porag has plenty of it. He sold his shop to his partner Sadat and moved to Thailand to start over and open a new bakery, specialising in sourdough bread.

To equip his first shop in Bangkok, Porag put his trust in Bongard once more. His bakery was equipped with a Soleo modular oven, a Spiral mixer and a proofing cabinet by the local Bongard dealer, Metro H&R.







Over the years, his adventure continued and evolved. Porag uses authentic, simple and traditional recipes and techniques for all his products. His croissants, baguettes and sourdough breads are among the best in Asia. Holey Bread is a casual place to enjoy artisanal paninis and sandwiches, as well as pastries.







Porag turned to Bongard again in 2021 to purchase a Cervap RS oven, an Eris bun divider and rounder, a Spiral EvO mixer and a dough sheeter.







Today, Holey Bread has 4 stores in addition to the main shop and Porag can now deliver fresh bread to the whole of Thailand through distance selling.
